Southwest-ChickenSouthwest Chicken Salad

4 Chicken breasts

Lawry's Mesquite Marinade

Cumin

Chili Powder

Paprika

Lawry's seasoning salt

Fresh Romaine, chopped

Fresh Greens

Spicy Chipotle Ranch

1 can corn, drained

1 can Black Beans, rinsed and drained

2 Cups Shredded Cheddar Cheese

Pico De Gallo- see Recipe at Appetizers

Marinade the chicken in Lawry's Mesquite seasoning. Sprinkle in Cumin, Lawry's seasoning salt, chili powder, paprika, and mix in large bag , marinade for at least 30 minutes. The longer the better! Grill chicken until done, we used the George Foreman. Chop up Lettuce (or buy bagged lettuce :)  ) , toss in Chipotle Ranch, top with corn, black beans, cheese, Chicken and Pico de Gallo :)
