Spicy-Jalapeno-Salsa

2 Tomatoes, diced

2 Jalapenos, diced and seeded

1 Cup Black Beans, rinsed

1 Cup Corn

1 Bunch Cilantro, chopped

1 Lime, juiced

½ Teaspoon Minced Garlic

½ Teaspoon Chili Powder

½ Teaspoon Smoked Paprika

Dice tomatoes and add to a large mixing bowl. Slice jalapenos in half, length wise, you may need gloves if you are sensitive to hot peppers. Using a spoon, scrape out seeds. Dice jalapeno and add to bowl. Rinse black beans and add to the bowl along with the corn. Coarsely chop the fresh cilantro and add to the bowl. Add garlic, chili powder, and smoked paprika. Squeeze the juice of one lime into the bowl and mix until all of the ingredients are combined. Serve up with fresh tortilla chips as an appetizer, or over the top of grilled chicken breast with rice and call it dinner! Don’t forget the Margaritas!
