frittata

10 eggs
2 cups of shredded Cheddar cheese
1 package of Eckrich Smok-y Sausage Links, diced
8 Bacon Strips, cooked and crumbled
1 small yellow Onion
3-4 cups of Frozen shredded potatoes
1 tablespoon of butter
Onion Powder
Smoked Paprika
Lawry's Seasoning Salt
Parsley
Pepper/Salt
1 tablespoon olive oil

Preheat oven to 400.
Beat eggs in a large bowl with salt/pepper, Smoked Paprika,Lawry's, Onion Powder (to taste), and set aside. Dice Sausage, and Crumble cooked bacon. In a Cast Iron Skillet, heat with olive oil and butter, and add Onion and saute until tender. Add bacon and sausage to the egg mixture and stir, add to the Skillet and gently stir in frozen potatoes, stir enough to mix it and let it cook on the stove top for approx 3-4 minutes, or until the egg mixture has set on the bottom and begins to set up on top. Sprinkle with Shredded cheese and Parsley. Place the Skillet into the oven and bake until the center is set, about 5-7 minutes depending on your Oven.
